Chef Antonio’s Peruvian Class

The Peruvian Cooking Class was this past Saturday. Here guest Chef Antonio helps guests learn how to make huancaina sauce to accompany his Stuffed Yucca. The huancaina sauce is very spicy, due to the addition of aji amarillo, a South American chile with a unique flavor.

Welcome to the Chez Alaska blog! Please check here often, because we will be posting information about upcoming classes, delicious recipes and cooking tips, and anything else of interest related to food and cooking. Chez Alaska is the only cooking school in Alaska, but we’re proud to say we are also the best cooking school in Alaska. Our chef-instructors are committed to helping people learn how to prepare wonderful food, and are excited about Alaskan cuisine.

One might ask, what exactly is Alaskan cuisine? That’s a fair question. We hardly have enough people to create a bonafide regional cuisine. Although Alaska is the largest U.S. state, our population is only 690,000, and we are young enough to still be a bit rough around the edges. Yet there are some recipes that are uniquely Alaskan.
